10 Vegetarian Recipes for Fall

Fall is in the air! The weather in LA is finally getting the memo (ever so slowly), and storefronts abound with autumn inspiration. Pumpkins adorn Whole Foods and nearly every coffee shop has made their menu home to fall specialty drinks. I love, love, love this time of year. This is when I get to cozy up with my favorite fleece throw, sip on something warm and bust out my comfiest wool socks. Bring on the boots, scarves and all those fall feels!

This time of year has me craving warm spices and harvest recipes that take full advantage of seasonal veggies. Basically, if I can put pumpkin or butternut squash in it then I’m going to!

2. Homemade Pumpkin Chai Latte

This pumpkin chai latte from COOKIE + Kate is both pretty and delicious. It’s also a much lighter version than the overwhelmingly sweet version at your local coffee shop.

3. Wild Rice Harvest Bowl

This recipe from Iowa Girl Eats pairs all of those autumn favorites: spiced butternut squash, roasted Brussels sprouts, chopped apples and dried cranberries. Mmmmmm.

4. Harvest Roasted Butternut Squash Quinoa Salad

I’m obsessed with quinoa, so I love finding new recipes to keep my taste buds excited. This recipe from Joyful Healthy Eats is packed with all of those warming flavors.

5. Butternut Squash Chili

What is more comforting than a big, warm bowl of chili? I love this vegetarian recipe from Savory Tooth. It is brimming with butternut squash and delicious spices.

6. Butternut Squash Veggie Pizza

I’m definitely a fan of lightened up pizza recipes and this one from Minimalist Baker is a fall gem.

7. Pumpkin Spinach and Walnut Spaghetti

This fall-inspired spaghetti recipe from Lazy Cat Kitchen is a lovely dish for any autumn evening. For extra heartiness, we like to use whole wheat spaghetti.

8. Roasted Sweet Potato & Farro Salad

Sweet potatoes and fall go hand in hand. This recipe from COOKIE + Kate is a spicy and warming meal that makes great leftovers.

9. Sweet Potato Noodles with Cashew Cream

I don’t know about you, but I have fully subscribed to the veggie noodle craze. This recipe from Pinch of Yum introduced me to the wonderfulness that is cashew cream.

10. Mulled Wine

I love wine. I love cider. How could I not love them combined? This recipe from Gimme Some Oven is the best cocktail compliment to a fall meal.

      I’m so glad you’re going to try it! I love Minimalist Baker and am thrilled I found a pumpkin granola recipe that is also healthy. It can be hard to keep the sugar consumption down during fall, so this recipe is a real keeper for me. I hope you enjoy it too! 🙂
