Happy Monday, loves!
I try to start each week on a super healthy note, mostly because my weekends are filled with too many cheat meals and lots of yummy cocktails. I usually wake up on Monday mornings feeling sluggish, lethargic, and positively bloated from all the crap I’ve put in my body over the previous couple days. Today, I’m feeling especially gross and toxin-laden after a fabulous weekend with my babes in Vegas. We had so much fun and indulged in decadent drinks and meals, so today marks the start of a cleanse for us haha. 😅
Yeah…I could eat better on the weekends and/or vacation, but what fun is that?? Instead, I give my body a nice reboot each week through exercise and nutritious meals – especially on Monday. I’ve rounded up my go-to recipes to set yourself up for a healthy week.
You’ll probably notice that a lot of these recipes are vegetarian or vegan. I’m transitioning back to a much more plant-based diet. For the better part of the last seven years, I’ve considered myself a pescatarian (I eat fish), but it got harder and harder to get in enough protein. Basically, I got lazy and bored with my repertoire of plant-based recipes and it became unsustainable. With new supplements, however, and a renewed commitment to meatless living, I’m keeping my diet to mostly fruits and veggies. But you can easily add meat to many of these recipes!
